So simple and easy!
3 tablespoons of melted butter
1 cup of sugar
1 can of coconut milk
3 cups of whole milk
1/4 teaspoon of cinnamon
Pinch of salt
1 baguette, cut in 1 inch squares (preferably not fresh)
Your choice of dried fruits and handful of roasted cashew nuts
Vanilla ice cream for serving
Preheat oven to 350 degrees F. Fully coat your dish with the melted butter using a pastry brush or paper towel.
In a large bowl, whisk eggs and sugar together and add the pinch of salt. Then, stir in coconut milk, whole milk and cinnamon. Add the bread and dried fruits and toss. Let soak for a few minutes (depending on how fresh or stale your bread is).
Pour mixture in the butter coated dish and sprinkle the nuts on top. Bake until the pudding pulls away from the sides of the dish which will take around 30-35 minutes depending on your oven so keep an eye on it.
